Dinner at a lovely restaurant is always nice but for me, a home-cooked meal is the best way to say “I love you!” Nothing is better than good food and my people around the table.
That said, I’m also terrible at remembering holidays when I meal plan for the week, so my goal this year is to give our valentine’s dinner menu a little extra thought ahead of time to make sure I add the ingredient we need to our shopping orders. So what to make? Here is a meal that will be special for the parents but also something your kids will enjoy (and fill their tummies with!)

ROASTED POTATOES
BABY POTATOES, CUT THEM IN HALF, COVER IN GOOD OLIVE OIL, SPRINKLE WITH KOSHER SALT AND PAPER, ARRANGE CUT SIDE FACE DOWN, AND ROAST IN THE OVEN AT 400 FOR AROUND 35-45 MINUTES — I LINE THE COOKIE PAN WITH REYNOLDS WRAP OR PARCHMENT PAPER FOR EASY CLEAN UP.
FRESH SALAD
SPINACH, SLICED STRAWBERRIES WITH CANDIED PECANS AND GOAT CHEESE. DRESSING OF YOUR CHOICE
