If you’re anything like me, weekend meal planning is essential to a smooth week — and sometimes uninspiring. I find myself making the same meals every couple of weeks — but always enjoy it when I try/add a new meal or two to the schedule.
Here are seven meals to encourage your meal planning this week.

Hot Honey Crispy Salmon Bowls
I made this a few weeks ago — as a change up to our usual salmon meal — and it was SO GOOD! It’s a little spicy, so go light on the chili powder and cayenne pepper if you don’t like heat, but overall so easy, light, and yummy.
If you don’t already — highly recommend lining your baking sheet with Reynold wrap or parchment paper to make clean-up a breeze.
Lemon Broccoli Pasta
Trying to be realistic and share meals that you can actually cook after a long day and that your kids will eat too. This is a favorite in our house — and a great way to get your kids to eat their greens! And the best part — it’s all cooked in one pot — so light clean up! Woot woot!
Healthy Turkey Burgers
These turkey burgers are so good you won’t remember they are the healthy choice. I like to add 1/8 to 1/4 cup of seasoned bread crumbs to this recipe. We also substitute English muffins for hamburger buns to keep it light! My kids love these burgers!
20 Minute Thai Peanut Ramen
This recipe is slightly (but only slightly!) more involved, but it’s worth it! It’s so delicious — especially on a rainy or chillier day of the week. When I make this, I let the kids have the store-bought ramen (because the flavor is milder) with hard-boiled eggs on the side.

How good do these look for Cinco de Mayo this week? With a spicy margarita — YES, PLEASE!
Ricotta Pasta Alla Vodka
How delicious does this look? It’s a little too involved (for me) during the week, but I’m earmarking it to try for Saturday or Sunday night.
